These mini crustless Quiche can be served as an appetizer, part of your party platter, a nice delight in your lunch box or a tasty snack. The sweetness of the onion with the touch of garlic lifts the flavor for me. I HAVE to make this flavor combination in a frittata! Although I used dried rosemary you could use any other herb to your personal taste.

The star ingredient of these quiches is the caramelized onion, which adds a sweet and savory note to each bite. The onions are slowly cooked to perfection, allowing their natural sugars to caramelize and create a rich, deep flavor profile. Paired with the luxurious brie cheese, known for its buttery texture and delicate taste, the combination is nothing short of heavenly.

Carbs in onions

Onions are considered to be a relatively low-carbohydrate vegetable. The carb content in onions can vary slightly depending on the type and size of the onion, but here is a general breakdown:

  • 1 medium-sized onion (approximately 110 grams) contains around 9-10 grams of carbohydrates.
  • The majority of the carbohydrates in onions come from dietary fiber, which is important for digestive health. A medium-sized onion usually contains around 2-3 grams of fiber.
  • The remaining carbohydrates in onions are primarily in the form of sugar, with a small amount of starch.

Ingredients

  • Onions - yellow onions are used but red onions could be substituted.
  • Cream - heavy cream
  • Brie - other cheeses can be used. Brie has a mild flavor that does not overpower the caramelized onions.
  • Red pepper - yellow or orange bell peppers can be substituted.
  • Garlic - add more than one clove for a stronger flavor.
  • Rosemary & Thyme - fresh or dried herbs can be used.

Recipe Variations

Here are a few variations you can try with the Mini Quiche with Caramelized Onion and Brie recipe:

  1. Spinach and Mushroom: Add sautéed spinach and mushrooms to the caramelized onion mixture before filling the tart shells. This will add an earthy flavor and an extra layer of texture to the quiches.
  2. Bacon: Cook some bacon until crispy, crumble it, and add it to the filling along with the caramelized onions and brie. The combination of bacon and brie adds a delicious smoky and savory element to the quiches.
  3. Sun-Dried Tomatoes and Basil: Chop some sun-dried tomatoes and fresh basil leaves, and mix them into the filling along with the caramelized onions and brie. This variation adds a burst of tangy sweetness and a fresh herbal note to the quiches.
  4. Gruyère Cheese: Substitute or combine the brie with gruyère cheese for a slightly nutty and more robust flavor. Gruyère pairs beautifully with caramelized onions and will give your quiches a distinctive taste.

FAQs

Can you use regular milk instead of heavy cream in quiche? ›

Whole milk is great, but a combo of heavy cream and milk is better. Eggs – Use 4 eggs per 1 cup of milk. Some quiche recipes throw in an extra egg yolk or two, but I don't find it necessary with the ratio of ingredients in my recipe.

How long does crustless quiche last in fridge? ›

TO STORE: Refrigerate quiche in an airtight storage container for up to 3 days. TO REHEAT: Rewarm leftovers in a pie dish in the oven at 350 degrees F. TO FREEZE: You can freeze a crustless quiche.

What is a good substitute for heavy cream in quiche? ›

Use half-and-half as a 1:1 substitute for heavy cream. It can work nearly as well for bringing creamy texture and flavor to sauces, soups and stews, mashed potatoes, quiches, and casseroles. In a pinch, it can even be used for whipping. While you won't get stiff peaks, you can build volume if you work quickly.

What happens if I use milk instead of heavy cream? ›

You can use whole milk or opt for skim milk to help slash the calories and fat content of your recipe. This substitute is especially useful in cooking, but it may alter the texture of baked goods and will not whip as well as heavy cream.

Why is my crustless quiche soggy? ›

If your quiche appears too watery to serve it could be because it was overbaked or underbaked, the egg to dairy ratio was not correct, the ingredients have too much liquid or it was baked on the wrong rack in the oven.

Who sells crustless quiche? ›

Waitrose Ham & Cheese Crustless Quiche340g

Free range eggs and cream with the classic cheese and ham pairing, without a crust. A perfect quiche to serve at summer picnics or for lunch.

Why does my crustless quiche fall? ›

Excess moisture is one reason why quiches collapse in a watery pool on your plate. Vegetables and meats like ham give off tremendous amounts of water when they're cooked. Therefore, if you're using vegetables in your quiche, it's imperative that you cook them first.

Can I use 2% milk instead of heavy cream for quiche? ›

For gluten-free crust, try making a sweet potato crust. The Custard: For your custard to set properly in the oven, use this easy ratio: 1 part dairy to 2 parts eggs. Classic custards use heavy cream, but 2% milk contains a fraction of the saturated fat and is still plenty rich.

Can I substitute milk for half-and-half in quiche? ›

How to sub: Combine 2/3 cup low-fat or skim milk with 1/3 cup heavy cream to make an equal substitute for half and half in cooking, baking, and for your morning coffee. This 1-to-1 substitute works well as a half and half substitute for cooking and baking, but it's not a good alternative for your coffee.

Can you swap cream for milk in quiche? ›

Can you use milk in place of cream in quiches? Yes, while the fat in the cream helps the quiche set, if you've run out or forgot to pick some up from the shops, full-cream milk should work as a replacement most of the time.
